"tubular tuesday"

Today's adjective is brought to you by none other than THE Tracie Leonard. She was alarmed when I did not know what "tubular" meant so she proceeded to send me the definition and then she called me "dude." I don't know who has my mother but could they please return her.
I am done my sophomore year of college. This is crazy and alarming but mostly good. I know I'll most likely have summer school but for the time being I don't know what to do with my free time. Both of my exams today were relatively short and I only have two grades in but things are looking up. I am just happy to be done.
I woke up at 8:30, got ready (washed my face) and then I woke up Soren. I made breakfast (cut up fruit to put on my yogurt) and made my coffee (Keurig) and then I sat down for my Ethics exam. I thought I did better than I did on this test but I still ended up with a B in the class. Look, I'm the first person to admit that I don't have the best grades but coming from where I was my freshman year, I'm a stellar student. Either I went to a really easy high school or college is hard, I don't know but I'm doing well now.
After my first test I worked out. I did a 25 minute Fitbod workout followed by a 30 minute dance video. I did this one: https://www.youtube.com/watch?v=m5MmlNf1rzU, Claire recommended it and it was not easy. It was a lot of jumping but it was fun. Then I showered, ate a quick snack and sat down for my statistics exam. I don't know how I did, some questions I got right away, others were harder. We'll see once I get it back. My grade in the class shouldn't change though.
I was planning on baking my blueberry bread tomorrow but I just couldn't wait. I made it today. It turned out really well and it's super yummy. The top is a little crunchy like a muffin and the inside is moist and fluffy. It's not too sweet either. The recipe I use provides instructions for a glaze but I opted for just a sprinkle of sugar on top because Soren doesn't love overly sweet things and we both like a crunchy top. Also, I had no idea that the recipe didn't use butter, just vegetable oil! It's still super moist. This is the recipe I used: https://julieblanner.com/blueberry-bread-blueberry-loaf-cake/. It was super simple, it did take an hour to bake but it was so worth it. I also used frozen blueberries and when I folded them in the batter turned a little blue but it doesn't look funny now that it's baked. Oh and my final note is that I used a little more than a cup like the recipe calls for because who doesn't love more blueberries! I think my next bread will be a cranberry orange, I love those combos and I don't know what else to do with my newfound free time. Perhaps I will try a cinnamon apple, Soren's mom says that she has a recipe for that.

I'm really enjoying "Virgin River", I have a few episodes left and I don't want it to end! The drama drags you in but it isn't scary or overwhelming. I'll let everyone know once I'm done watching what my final reviews are.
I don't have any plans for tomorrow. I'm going to sleep in some and then I'll make brunch of sorts and then I'll probably workout. I found some recipes for how to make Chipotle's chicken and rice and maybe I'll try that tomorrow. It's funny, Soren and I ate so much Chipotle at school, my team always gets Chipotle, and I grew up eating it about once a week that I was sick of it. I never opted for Chipotle when there were other choices but recently I've been craving it. You always want what you can't have... So I figured, why not bring a taste of Chipotle home! I'm going to try it either this week or next and I'll let you know how it turns out. The real taste tester would be my dad but that'll have to wait. If it goes well I'll make some for you, Dad!
I still have no idea what my summer is going to look like. It's beginning to sound like summer school for all! I'm going to have to pack up my room at some point, we'll see. The seniors (firsties) are the top priority right now. We'll know more once they've been sent their separate ways.
Sorry that this has turned into a food blog. I promise once I start doing more I'll have more to write about. My only exciting news is that I ordered an avocado tool. If I was good at this I'd learn how to hyperlink and stuff, maybe I'll work on that. It's a 3-in-1 took that does everything you'd need for an avocado. It wasn't expensive and I've seen them used and they look cool. I guess this is what quarantine has come to, I'm excited about an avocado cutter. It's a practical tool I think. I can never get the inside out all of the way and keep the cuts nice. Bebe just squeezes the avocado but that's not visually appealing on a salad. Her guacamole is really good though. I really want Mexican food!
