Alright well let me just start by saying I truly don't understand technology. Especially the cyber side of things... All I wanted to do was post the recipe to the chicken taco avocados and make it a hyperlink because I didn't take a picture of dinner and I couldn't figure it out and I thought I'd copied my last try at this post in its entirety but I didn't so here I am writing it again. It's okay, I don't have anything else to do.
I made stuffed avocados for dinner. I'm still trying to insert the website as a hyperlink but it doesn't seem to work so I guess I'll just include the URL like I normally do. Instead of rambling I'm going to just list the changes I made to the recipe: I used 4 avocados instead of 3, I didn't measure 1 cup of anything so everything I added to the stuffed mixture was approximately 1 1/4 cup plus or minus, I didn't use a whole cup of ranch in the topping mixture, and I have no idea how much cilantro or lime juice I used for any part of it. I had extra filling and I used one more avocado than the recipe called for... I also wouldn't use a whole packet of taco seasoning next time, I found it to be a little too salty. I'm glad I made an extra avocado because Soren ended up eating two whole avocados. I also think that when I scooped out the insides I was supposed to leave a little avocado in there and I definitely made sure they were scooped clean so perhaps that had something to do with why there was so much topping. Overall they were good, I don't know if I'd make them again though. I think they were almost more of an appetizer because of how little filling I was able to fit in them. So this has been a big deal since we've been in Maine, Soren's grandparents eat dinner at 8:45-9:00 PM. We're not used to this and we adjusted initially but then we decided that we'd just cook for ourselves or eat at his mom's. Now that we're all at the lake we've just been making two dinners. Soren's mom and I plan out what we're going to eat ahead of time and get the groceries and stuff so that we don't have to wait and we can just have what we want. So this week, his mom and I, were under the impression that his grandparents wanted to do homemade Chinese on Wednesday. That's totally fine, we all like it. So we planned on dinners for Monday and Tuesday and then figured we'd figure the rest of the week out afterwards. Tonight we received the devastating news that they're planning on eating leftover ham tomorrow night instead. None of us like ham. We aren't happy and I'm now trying to figure out what we could do instead. I jokingly suggested stuffed tomatoes because I've been on a stuffed vegetables craze but I truly would never do that because I hate warm tomatoes. Soren begged that I wouldn't do that. I do have a lot of recipes for stuffed shells because his mom has a ton of them but I guess I'll save them for next week.
So I guess I'll talk about my day in reverse, well sort of because actual reverse would be a lot of work. I had class this morning and then I went into town and had lunch with Soren. I did my homework and then I did a 15 minute arms workout via Youtube and then a 20 minute legs workout, also via Youtube. I finished my homework before I went on a 2 mile walk. It was a really nice day today. Tomorrow I'm going to run after class.
Wow I just can't stop thinking about how much I really don't like ham. I'm not talking lunch meat ham, I'm talking about thick, Thanksgiving/holiday ham. I didn't eat it growing up because I don't think anyone in my family likes it. It's so salty and I don't like the texture. I don't really like most pork products, even bacon... I'll eat like 2 pieces and I've had enough. I also really don't like sausage. I don't like rich breakfast foods. I want breakfast to fill me up but not to the point where it weighs me down. It's a hard balance. Especially because I can only eat the same food over and over for a few days before I get sick of it. My dad on the other hand... I think he's been eating the same thing for breakfast since before I can remember. I've been eating yogurt for breakfast which I really enjoy, I like the brand Two Good because it's low fat and low sugar but has a lot of protein, it's good with berries and some dry cereal or granola. But my skin has been looking pretty bad and I think part of it is because of how much dairy I've been having so I'm going to cut back. I'll probably have protein pancakes or oatmeal tomorrow. I doubt anyone cares, I'm just letting you know what's going on.
I think that's all for now... If anyone knows of any good, easy recipes, I'm willing to try them!!
