stuffy-nosed saturday

First off, I'm sorry if you're all tired of hearing about my sickness. I swear I'm getting better. I'm coughing less and I actually slept for part of last night but now I'm just all stuffed up and my head feels like it weights 100 pounds.


Today was rather uneventful but still productive. Soren and I have both been doing homework all day. He was writing his Ethics paper and I had my History paper. We're done! Now it's finals week, it shouldn't be too bad it'll just be weird to do them all online. I guess I'll keep you updated.


I did make the falafel. I found a recipe that did not require frying, you just put them in the oven. Here it is: https://www.eatingbirdfood.com/easy-baked-falafel/#tasty-recipes-33000 I think they taste good and the texture is good and they aren't too dry but they're a little salty. I don't know why, the recipe doesn't call for lots of salt. I think if I make them again I'll just leave out the salt. I used a food processor for the first time ever. It's a big fancy kitchenaid one, I thought that the outlet didn't work and then I thought the food processor didn't work, and I almost gave up until I watched two Youtube videos and figured out that the handle had to be screwed on a super specific way. I finally blended all of the chickpeas up together. They were easy after that, probably simpler than cookies, it's just a few minutes to blend and a few minutes in the oven and then you have falafel! I put them on a salad, I'll include a picture. It was really yummy, I used spinach and I had two falafel, a scoop of hummus, cucumbers, green bell pepper, tomatoes, and olives with a little Greek dressing. I really miss Zoe's Kitchen.

Well the falafel was not quite enough for my cooking fix. So I made some homemade tortilla chips. I'd seen it before and I knew it wasn't too hard. I bought some FiberOne Spinach tortillas a few weeks ago and I didn't really like them and I hadn't been eating them so I figured if I hated these homemade chips it wouldn't matter. Let me just say, it doesn't seem like that much work but I wouldn't do it again. I guess the argument is "it's healthier" but tortilla chips aren't bad for you. I just cut up two tortillas and then I brushed them all with olive oil and sprinkled a little salt on top and baked them for 10 minutes at 400 degrees. They taste fine, I'm sure they'd taste better if I used regular tortillas or corn tortillas but it was kind of fun. Here's a picture! (The green tortillas makes for an ugly chip color and perhaps I could've taken them out a few minutes earlier)

After my cooking extravaganza I continued to work on my paper and ate my really yummy salad. That's basically it. That's all I did today. Tomorrow we have some yard work and we'll probably make waffles for lunch! I think that's all, I don't really know, I'm sure I'll have more to say tomorrow!
