finally a "may" monday

It was warm and sunny today which made me super happy, that's why I'm saying it's a "May" Monday. May is supposed to be warm and not SNOW. Yesterday was fairly chill and I was busy cranking out waffles so I didn't have time to blog. I don't really remember what I did yesterday but I don't think it was super exciting. All I know is that I doubled the waffle recipe and I made a lot of Belgian waffles. Turns out, they taste just as yummy when you warm them up in the oven the next morning.
Oh and a funny story, so yesterday Soren's mom brought us some homemade berry shortcakes and she put the homemade whipped cream in a Tupperware in the fridge at his grandparents' house. I was excited to try it last night and I opened a container, expecting it to be whipped cream, and it was clam dip. I was so surprised and confused that I didn't know what to do. Luckily I didn't ruin my shortcake, I realized what it was and reached for the other container with white dip in it, this time it was what I was looking for. They were yummy btw.
For the next two weeks Soren is helping his grandparents out at work everyday from 12-4ish. I offered to help but they said they only need one of us. So today I went on a run, played with the dog, and made some snickerdoodle blondies. Soren's mom loves snickerdoodles but if I'm being honest, I just wasn't dedicated to the idea of making the cookies because they're a lot of work. So I thought blondies would be easier. They were still a labor of love, the dough was almost like a cookie so it required hand kneading. They turned out to be good though and I think his mom liked them! It's super easy, it needed more whipping cream then the recipe called for, just add as needed. Also, don't make fun of my poor drizzling skills, they still taste good. I'm also now learning that all a blondie is is a thick cookie. I also didn't know that they'd need that big of a pan... before I began I was assuming a small tray would do but it's okay, now there are more to eat.

I also ran today and did a quick ab workout. I ran 3 miles. I went a little faster, closer to how I used to run. It was not easy though. I think I'll do intervals tomorrow. We'll see how I feel after that.
I don't really have any plans tomorrow. I think the next thing I'm going to make are homemade strawberry Poptarts. I love Poptarts, like a lot. Like I'd rather eat those than most other desserts. For my birthday I put a candle in a Poptart and I was happy. They are my vice. I can't keep them around or else I'll eat all of them really quickly. I love most flavors, my favorite are strawberry or the cookie dough ones but Soren's favorites are also strawberry so I'm going to try it. I'm even going to make the strawberry filling from scratch. I figured I have the time so why not. I don't know what to expect from them, I might do it over two days. The recipe author says that they normally make the filling the night before so they can focus on the dough the next day, I think I'll try that. I've never made my own jam... I'll keep everyone updated.
Oh and my cold brew maker came today. I don't have any ground coffee for it yet so once I do I'll try it out. I'm super excited for it. It does require a lot of coffee grounds at a time but it makes probably 4-5 cups. It looks easy enough. I hope it works! I prefer iced over hot coffee, even though I'll always drink either. I figured over all this would be cheaper than buying the iced coffee in the container like we have been. I didn't actually do the math I just thought it would be. I'll let you guys know if it's worth it.
