waffles for dinner

So today's my mom's birthday, happy birthday Mom! I love you so much and I can't wait to see you soon.
The name of this post is inspired by my sweet friend Claire who is actually a really good baker and has taught me a lot about actually following recipes. For examples, you should actually let your butter get to room temperature and should actually mix the butter and sugar separately so that it makes your cookies chewy or something, I don't really know but I trust her. When I figured out how to make my eggs stiff peaks I sent her a picture and then I sent her a picture of my first waffle and she said, "You can eat waffles for dinner," and I said, "of course, you can eat waffles any time of day!" So that's why this post is called "waffles for dinner" because we actually ate them today for brunch.
Okay now on to what I was going to talk about. There's this place in town called Peace Love and Waffles in Dover-Foxcroft and Soren and I got take-out from there last Saturday. The waffles were awesome. They were light and fluffy and I really want to try them all. This inspired his mom to get a waffle iron and we've waited all week to try it out. I found a really easy recipe on https://www.food.com/recipe/the-best-belgian-waffles-63071 for Belgian waffles and they were super easy to make. I had never whipped egg whites into stiff peaks and today I learned how to! It's not hard at all, you just put your egg whites in a bowl and turn on your hand mixer and within a couple of minutes you'll have fluffy egg whites with little peaks.

The recipe did exactly what it said, it made six yummy waffles. Everyone who had one enjoyed them and they smelled really good. I'd like to try other recipes and maybe add some chocolate chips or blueberries!
